The Recipe: Sweet Squash and Savory Sausage Bowl

Ingredients:

  • 2 sweet dumpling squashes, halved and seeded
  • 1 tbsp. olive oil
  • 1 tbsp. garlic, minced
  • 1 cup royal blend rice
  • 1 ½ cups water or vegetable stock
  • 1 tbsp. Davlie Gut Health Seasoning Blend*
  • 1 tsp mandarin peel powder
  • 4 all-beef sausage links, sliced
  • 4 tbsp. green onions, diced

 

Instructions:

Prepare the squash:
Preheat your oven to 400°F (200°C). Mix the Davlie Gut Health Seasoning Blend and mandarin peel powder together.

Cut the squash in half and remove the seeds.

 

 

 

 

Rub the cut sides of the sweet dumpling squash with olive oil and coat with the seasoning blend.

 

 

Place the halves cut-side down on a baking sheet and roast for 30-35 minutes, or until tender.

Save the seeds! You can roast them in the oven later for a snack or save to start growing your own squash at home!

 

Cook the rice:
While the squash is roasting, bring the water or vegetable stock to a boil in a saucepan. Stir in the royal blend rice, cover, and reduce the heat to low. Simmer for 15 minutes and then rest for 5 minutes.

Cook the sausage:
Bring 3 cups of water to a boil. Add the sausage and cook for 3 – 5 minutes. You can also cook in a skillet if you prefer. Once cooked, slice or dice the sausage as preferred.

Chop the roasted squash:
Once the squash is cooked and cooled slightly, chop it into bite-sized pieces and set aside.

Combine the ingredients:
In a large mixing bowl, combine the cooked rice, roasted squash, sausage, and mandarin peel powder. Toss gently to mix.
Top and serve:
Add the diced green onions for a fresh, vibrant flavor. Serve hot!
